This book is primarily an excellent compilation and comprehensive summary of some of the early work done by the Coffee Brewing Institute and Coffee Brewing Center, long since out of print.  This one of a kind handbook deals with the brewing conditions found in most drip filtration brewers, and is well written and focused. Included in the text are chapters on water quality and how it affects taste, proper grinding, holding and serving temperatures and methods.
